Creamy Coffee Pots de Crème
INGREDIENTS
MAKES 4 SERVINGS
1 cup 35% whipping cream 3 tbsp icing sugar ¼ tsp vanilla Coffee Pudding 1 cup mascarpone cheese, at room temperature ¼ cup icing sugar ¼ cup espresso or strong coffee, cooled 1 tbsp Irish cream or coffee liqueur (optional)
Grated chocolate
Chocolate-coated coffee beans (optional)
DIRECTIONS
Using electric mixer, beat cream, icing sugar and vanilla until stiff peaks form. Cover and refrigerate until ready to use.
Coffee Pudding In separate bowl, beat mascarpone, icing sugar, espresso and liqueur until smooth. Stir in ½ cup of the reserved whipped cream. Divide pudding among four 1-cup jars or glasses; refrigerate for 1 hour.
To serve, top with remaining whipped cream and chocolate, and coffee beans (if using).
