Gyu Don
GYU DON (BEEF BOWL) is one kind of donburi — a class of Japanese dishes that consists of a flavourful cooked item served on top of a bowl of steamed rice.
Dashi Stock ¾ cup Sake or Dry Sherry 2 Tbs Mirin 2 Tbs White Sugar 1 Tbs
Yellow Onion 1 small, quartered and thinly sliced
Beef Sirloin 200 g, thinly sliced
Soy Sauce 2 Tbs
Eggs 2 large, whisked with 1 Tbs water
Cooked Japanese Rice for serving
Green Onion 1, sliced
Toasted Sesame Seeds 2 tsp
1 BRING the dashi, sake, mirin and sugar to a simmer and cook until the sugar has dissolved.
2 ADD the onions and cook until soft, about 3 minutes.
3 ADD the beef and soy sauce and simmer for 5 minutes.
4 STIR in the egg and cook, stirring, until the egg is incorporated and the sauce is slightly thickened.
5 DIVIDE the cooked rice between two bowls and top with the beef mixture and its sauce. Garnish with the green onion and sesame seeds.
