Clafoutis

MACE ENHANCES COOKED DISHES made with fruit and goes particular­ly well with cherries.

Fresh 600 g, Cherries pitted

Eggs 3 large

All-Purpose Flour

1/2 cup

Powdered Mace 1/2 tsp

Vanilla Extract 1/2 tsp

Sugar 1/2 cup, a little extra for sprinkling

Whole Milk 1 ¼ cups

Soft Butter as needed 1 PREHEAT the oven to 375°F. If the eggs have come straight from the refrigerat­or, place them in a bowl of warm water to bring to room temperatur­e. Grease a 2-quart baking dish generously with butter.

2 LAY the cherries in the baking dish.

3 WHISK together the eggs, flour, vanilla, sugar, milk and mace until smooth.

4 POUR the batter into the baking dish and sprinkle with a little more sugar.

5 BAKE for 40–45 minutes, until the clafoutis is set and a toothpick comes out clean.

6 SERVE warm.
