Eggnog

HOMEMADE EGGNOG IS FAR SuPerior to the kind that comes in a tetra pak. If you buy mace as whole blades and grind them just before use, the result will be even more delicious.

Eggs 3 large, separated

Sugar ¼ cup, more to taste

Dark Rum 1/2 cup, more to taste

Brandy 1/2 cup Bourbon ¼ cup Whipping Cream 2 cups Whole Milk 1 cup Vanilla 1 tsp

Mace freshly ground, for garnish

1 WHISK the egg whites and set aside.

2 WHISK the yolks with the sugar then whisk in the rum, brandy, bourbon, milk, cream and vanilla.

3 FOLD in the egg whites and chill the mixture for 4 hours.

4 TO serve, stir the mixture and taste. Add more rum if you like a boozier nog. Pour into glasses and top with freshly ground mace.
