Pinto Bean Pecan Pie

don’t knoCk It untIl you try it! Pinto beans add protein and boost the nutritiona­l value of pecan pie, while tempering its cloying sweetness. Unbaked Pie Crust 1 Sugar 1 cup Butter 1 cup, melted Vanilla 1 tsp

Canned Pinto Beans 1 cup, heated and lightly mashed

Pecans finely chopped, 1 cup

Eggs 2, well beaten 1 PREHEAT the oven to 350°F.

2 DRAIN the pinto beans, reserving one quarter of the liquid from the can.

3 COMBINE the reserved bean liquid with all other ingredient­s and pour into the pie shell.

4 BAKE for 45 minutes. The centre of the pie should be slightly unset.
