Buttermilk Ranch Dressing

Buttermilk 1 cup

Shallots chopped, 1 Tbs

Garlic

1 small clove, chopped

Fine Salt 1 1/2 tsp

Fennel Seed 1 tsp

Ground Coriander 1 tsp

Freshly Ground Black Pepper

1/2 tsp

Paprika a pinch

Mayonnaise 1 cup

Pickle Brine 1/2 cup

Sour Cream 1 cup

1 PLACE the buttermilk, shallots, garlic, fennel seed, coriander, pepper, salt and paprika in a blender and process until smooth.

2 MIX the mayonnaise with the pickle brine and when smooth, fold into the buttermilk mixture.

3 LEAVE to infuse overnight then pass through a sieve.

4 WHISK in the sour cream, whisking until you have a smooth dressing.
