Salmon Tiradito

IN PERU, tiradito is usually made with white fish but salmon and tuna are often the only sushi grade (super fresh) fish available at supermarke­t fish counters. It may not be on display, so ask for it. Aji Amarillo Paste is available online.

Sushi Grade Salmon 8 oz

Lime juice of 2

Aji Amarillo Paste 1 Tbs

Hot Red Chile

1, seeded and thinly sliced

Fresh Ginger grated, 2 tsp

Soy Sauce 1 tsp

Salt and Freshly Ground Black Pepper to taste

Cilantro chopped, 2 Tbs

1 SLICE the salmon as thinly as possible and lay on a plate.

2 WHISK together all other ingredient­s except the cilantro.

3 POUR the dressing over the fish, garnish with cilantro and serve immediatel­y.
