Salmon Tiradito
IN PERU, tiradito is usually made with white fish but salmon and tuna are often the only sushi grade (super fresh) fish available at supermarket fish counters. It may not be on display, so ask for it. Aji Amarillo Paste is available online.
Sushi Grade Salmon 8 oz
Lime juice of 2
Aji Amarillo Paste 1 Tbs
Hot Red Chile
1, seeded and thinly sliced
Fresh Ginger grated, 2 tsp
Soy Sauce 1 tsp
Salt and Freshly Ground Black Pepper to taste
Cilantro chopped, 2 Tbs
1 SLICE the salmon as thinly as possible and lay on a plate.
2 WHISK together all other ingredients except the cilantro.
3 POUR the dressing over the fish, garnish with cilantro and serve immediately.
