Jamaican Jerk Marinade
THIS SPICY marinade will transform chicken, pork or ribs with an explosion of flavour.
Onion 1, roughly chopped Scallions chopped, 2/3 cup
Garlic 2 cloves, chopped Dried Thyme ½ tsp
Salt 1 tsp Ground Allspice 1 ½ tsp Ground Nutmeg ¼ tsp
Ground Cinnamon ½ tsp
Habanero Pepper minced, ½ tsp
Black Pepper 1 tsp
Green Tabasco Sauce 5 drops
Soy Sauce 2 Tbs
Vegetable Oil 2 Tbs
1 BLEND all ingredients in a food processor. Rub into the meat of your choice and marinate in a closed ziplock bag for a minimum of 4 hours, or overnight. Cook meat on a barbecue or bake in a 450°F oven.
