TEATIME: A VICTORIA DAY INSPIRED RECIPE

WHAT’S THE OCCASION?

Think afternoon tea is boring? Think again. This Victoria Day, even though we are not welcoming guests in, why not break out the fine china and crystal? Enjoy an afternoon tea in a real teacup and a classic British cocktail such as a Gin & Tonic or Pimm’s Cup. The latter is made by combining 2 ounces of Pimm’s No. 1, 3 ounces of lemonade and a dash of lemon-lime soda. Garnish with a wedge of lemon, a spear of cucumber and a sprig of fresh mint.

Cucumber and Smoked Salmon Open-faced Sandwich

2 to 4 Servings Prep Time: Less than 30 minutes Total Time: Less than 30 minutes

1⁄3 cucumber

2 tbsp mayonnaise

2 tbsp chopped dill

1⁄3 lemon, juiced, zested

1 tsp shallot, minced

1⁄2 tbsp capers

2 dashes hot sauce

1⁄3 lime juiced, zested

2 to 3 slices white bread, crusts removed

Dill for garnish

Directions: Using a vegetable peeler or mandolin, cut the cucumber into long strips. Cut each long strip into thirds and set aside (expected yield is 8 pieces of cucumber). Make a dill mayo by combining the mayonnaise with chopped dill, lemon juice and lemon zest. In a separate bowl, make a caper salsa by combining the diced shallot, capers, hot sauce, lime juice and lime zest. Cut pieces of white bread, using a serrated bread knife, to match the shape of the cucumber slices. Spread dill mayo on top of the slices of bread and top with a piece of cucumber and a little caper salsa. Garnish with a sprig of dill.
