Kick the winter chill with chili!

The deep chill of Januar y can be tough to shake. After a dark commute home from work or an after noon of shovelling the driveway, you need something hot and hear ty to soothe aching muscles and a tired spirit.

This winter, there are many ways to enjoy the season in your new home, including filling your kitchen with the inviting aromas of classic ‘comfort food’ favourites to kick the winter c hill and delight your friends and family.

Stay cozy throughout the week and enjoy weekends of football playoffs with a spicy chili that’s guaranteed to heat you up when t he temperatur­e drops. Warm up with this delicious recipe from TERRA @ Home’s chef Rachel Johnstone.

CHEF RACHEL’S CHILI – SERVES 4-6 INGREDIENT­S:

• 2 tbsp oil

• 12 oz lean ground beef

• 1 large white onion, chopped

• 1 medium green pepper, chopped

• 2 cloves garlic, minced

• 15 oz red kidney beans, rinsed and drained

• 16 oz canned/fresh tomatoes

• 8 oz tomato sauce

• 3 tbsp chili powder

• 10 small mushrooms, sliced

• Salt and pepper

METHOD:

In a large saucepan, cook ground beef in oil for 1-2 minutes until browned. Add onion, pepper mushrooms, and garlic to the pan. Continue to cook until meat is completely browned and vegetables are crisptende­r. Stir in the kidney beans, tomatoes, tomato sauce, and chili powder. Season the mixture to taste with salt and pepper. Bring to a boil, and turn down to a simmer. Simmer for 45 minutes at minimum… feel free to simmer for longer. With chili, the longer the better! Serve with a nice fresh loaf of crusty bread.
