Summer’s here with a bang and it’s hot, hot, hot. I do most of my cooking in the morning when I can then zap anything that needs to be reheated in the microwave later for speed and to keep the heat down.

Today’s offering is quiche now a lot of people underestim­ate quiche, but I think it can be a tasty addition to any table or picnic lunch. You have the choice to add so many things and adjust it to your family’s tastes. Today mine is cheese and bacon and tomato but it could be sausage and fried onion or cheese and pickle, ham and tomatoes Spinach and cheese, the choice is up to you. Either way I think if the veg cut up smaller even the pickiest of eaters might give it a go.

1lb of shortcrust pastry either home made or bought

4 eggs

3 or more strips of bacon cut up

Salt and pepper to taste

1 tomato sliced

A dash of milk

1 cup of grate cheese, I used cheddar

1 teaspoon of parsley

A little flour for dusting

Method

Roll out your pastry.

Line a flan or pie dish (can be tin foil, or a baking tin or a silicone one like mine shown in the second picture). With the shortcrust pastry.

Bake the pastry case empty for about 10 mins in a preheated (oven 350F) Take out and start the filling.

In a bowl or jug, crack the eggs, whisk a little, add the salt and pepper. Whisk again.

Slice the tomato and arrange it on the bed of the pastry case. Next add the cheese and whatever else your using, leaving the parsley till last to sprinkle over the top of the egg before it goes into the oven. Bake until it’s risen and cooked through. Take it out of the oven and cool on a rack still in the tin.

When cold, turn out of the tin and place on a plate. Can be eaten jot or cold. Goes well with a salad, some people like fries too.

It’s easy and relatively cheap I like it for when I don’t have much of anything left and I can put a mixture of ingredient­s like if I had only two sausages left I’d cut them up into rings and add cheese, that sort of thing.
