Strawberry, Tarragon and Goat Cheese Crostini with Balsamic Reduction

Looking for the perfect appetizer to serve at your next party? Try these delicious crostini topped with fresh strawberri­es and a balsamic reduction. This appetizer is simple to make, yet looks elegant and festive, making it the perfect choice for any holiday gathering! You may want to make the balsamic reduction a few hours in advance to give it lots of time to cool before assembling the crostini at party time.

Ingredient­s: 1 (350 g) baguette, cut on an angle (1 cm thick)

3 tbsp (45 mL) extra virgin olive oil 1/2 cup (125 mL) PC Splendido Balsamic Vinegar of Modena – 2 Leaf 1/4 cup (50 mL) honey

1 pkg (140g) PC Soft Unripened Goat’s Milk Cheese

1 pkg (454g) strawberri­es, stems removed and thinly sliced

1/4 cup (50mL) fresh tarragon, whole leaves

Instructio­ns:

■ Preheat oven to 400 F.

■ Arrange baguette slices on baking sheet; brush one side with olive oil. Bake in centre of oven for about 10 minutes or until slightly golden and crisp. Remove from oven; let cool on baking sheet.

■ Meanwhile, in nonstick frying pan, add vinegar and honey. Heat over medium-high; bring to a simmer, stirring occasional­ly, for three to four minutes or until slightly thickened and reduced by one-quarter. Remove from heat; let cool.

■ Spread about 1 heaping tsp (5 mL) of goat cheese over each baguette slice. Top each with a few strawberry slices and drizzle with balsamic glaze. Sprinkle with tarragon. Serve immediatel­y.
