Article 110 Kid-Friendly Salad Dressing

I’ve had so many conversati­ons this month about what to pack in kids’ lunches. It seems that every parent wants his or her school-aged children to eat healthy lunches. It’s not easy to balance healthy foods with the foods that your kids will actually eat at school. I know as I’ve discussed this many times with my kids.

As a mom and a nutritioni­st, I try to focus on the bookend theory when it comes to feeding my kids healthy foods. I make sure I bookend their days with breakfast and dinners that are loaded with healthy ingredient­s and muchneeded nutrients.

The bookend theory allows me to meet my kids half way when it comes to their school lunches. I feel better packing processed meats and store-bought cookies in their lunches knowing that I can make them a breakfast and dinner full of good fats, protein, and as much veggies as I can get them to eat.

In the past couple of years my kids have started eating salads. I try to serve salad every dinner just because I know how important it is to get vegetables in to them.

I’ve been working on my repertoire of kid-friendly salad dressings. This one is a winner. Kid and adults will enjoy this nutrient dense salad dressing recipe.

Apple cider vinegar and garlic are both great for gut health and nutritiona­l yeast is high in B vitamins. A good quality olive oil is essential to use in any salad dressing recipe. Not only will it add great flavor, but it is also a good source of healthy fats, a much-needed nutrient for all of us.

Serve this on a crunchy salad and I’m betting the kids will gobble it up.

Kid-Friendly Salad Dressing

1/3 cup apple cider vinegar 1/3 cup filtered water 1/3 cup coconut aminos 1 clove garlic 3/4 cup nutritiona­l yeast flakes 1 cup extra virgin olive oil sea salt and pepper to taste Combine all the ingredient­s in a blender and blend until smooth.

Store in a mason jar in the fridge for up to a week.
