Spice up the last days of summer with samosas

Deep-fried treat will win the approval of busy youngsters

The only thing my nine-year-old son Aaron wants to do during the summer holidays is play. He gets very busy with his friends and the last thing he wants to do is sit down and eat big meals. I decided to create a few snack items for him and his friends to enjoy.

Samosas are my all-time favourite snack to make, and are also great lunch items. This traditiona­l snack from Punjab, India, often contains potatoes and peas, but I decided to make them with meat. The flavours of cooked beef and spices combine beautifull­y with the sweet mango chutney, which makes the most of in-season mangoes.

A cucumber and tomato salad offers another good contrast for the samosas. The freshness of the cucumber complement­s the citrus flavours of this coriander dressing, but you can use cumin powder for a warm earthy flavour or cardamom powder for a floral touch.

I couldn’t justify something heavy for dessert because we’ve already deepfried the samosas. So I opted for a healthier, easy-to-make dish of yogurt and berries.
