Cucumber and Tomato Salad with Coriander Dressing

SERVES 4

1 medium cucumber, cubed 2 medium-ripe tomatoes, seeded and cubed 2 Tbsp mint, chopped 1 tsp ginger, finely chopped 2 Tbsp flaxseed oil Salt and pepper to taste 1 tsp coriander powder Zest and juice of lemon

▶ Mix all the ingredients in a bowl and serve cold.
