Perfectly Grilled B.C. Pork Loin Chops

For juicy pork chops every time, be sure to use a digital meat thermomete­r so you can properly manage the internal temperatur­e and not overcook it.

This method works great with boneless, fresh loin chops cut about ¾ ” – 1 ” thick.

To start, turn on your BBQ, clean the grill grates, and allow the BBQ to heat up to 500°F.

Meanwhile, season pork chops on both sides with your favorite BBQ dry rub or some classic salt and pepper. Place chops on the heated grill, turn the temperatur­e down slightly to about 400 degrees and close the lid.

After 3–4 minutes, lift the lid and flip the chops. Then close the lid again and cook for another 3–4 minutes.

Brush on BBQ sauce or glaze of

choice on one side of chops. Cook for another minute, flip the chops, and brush sauce on the other side. Tip: If you brush on the sauce too early, the sauce will burn and taste bitter.

Remove the pork chops from the BBQ when the internal temperatur­e reaches 140°C.

Let the pork chops rest for another 5 minutes allowing the temperatur­e to rise slightly. The perfect pork chops should be a moist, juicy and faintly pink at 145-150 degrees.
