Blueberry Punch

Served with sparkling wine or with club soda for a virgin iteration, this sweet berry punch is refreshing — and tastes like summer. Enjoy this concoction of homemade blueberry syrup and fresh fruit juices on your favourite patio or beach with grilled foods, salads or even as a way to wash down more fresh B.C. blueberrie­s.

Ingredient­s:

2 cups blueberrie­s 1/2 cup granulated sugar 2 tbsp lemon juice 2 cups cranberry juice 2 cups pineapple juice 1 cup blueberry juice 1 cup raspberrie­s 1 bottle (750 mL) sparkling wine or club soda

Method:

▶ To make the blueberry syrup, boil one cup of blueberrie­s with the sugar, lemon juice and one cup of water for 10 minutes. Mash the blueberrie­s and strain the juice through a fine mesh sieve, discarding the pulp. Allow to cool. In a large pitcher, combine the cooled syrup, remaining blueberrie­s, cranberry and pineapple juices and raspberrie­s. Serve on ice topped with sparkling wine or club soda.
