Blueberry Punch
Served with sparkling wine or with club soda for a virgin iteration, this sweet berry punch is refreshing — and tastes like summer. Enjoy this concoction of homemade blueberry syrup and fresh fruit juices on your favourite patio or beach with grilled foods, salads or even as a way to wash down more fresh B.C. blueberries.
Ingredients:
2 cups blueberries 1/2 cup granulated sugar 2 tbsp lemon juice 2 cups cranberry juice 2 cups pineapple juice 1 cup blueberry juice 1 cup raspberries 1 bottle (750 mL) sparkling wine or club soda
Method:
▶ To make the blueberry syrup, boil one cup of blueberries with the sugar, lemon juice and one cup of water for 10 minutes. Mash the blueberries and strain the juice through a fine mesh sieve, discarding the pulp. Allow to cool. In a large pitcher, combine the cooled syrup, remaining blueberries, cranberry and pineapple juices and raspberries. Serve on ice topped with sparkling wine or club soda.
