Blueberry Goat Cheese Sweet Chili Phyllo Cups
These sweet-and-savoury cups prove to be a crunchy treat that are perfect for a dinner party or picnic. Dreamed up by the team at the B.C. Blueberries Association, these pastry cups boast an interesting mix of blueberries, goat cheese, crushed chili paste and more.
Filling ingredients:
2 cups diced yellow onion 2 tbsp vegetable oil 1 tsp salt 1/2 tsp pepper 1 tbsp apple cider vinegar 1 large egg 1 tbsp honey 2 tsp lime zest 1 tbsp lime juice 2 tsp Sambal Oelek or crushed chili paste 1 cup blueberries 1/3 cup crumbled goat cheese 1/4 cup sliced almonds 2 tbsp fresh basil, finely chopped Phyllo cup ingredients: 1/3 cup melted butter 4 sheets phyllo pastry, thawed
Method:
▶ In a pan, sauté the onions in the oil for a few minutes. Ad the salt, pepper and vinegar and reduce heat to slowly caramelize the onions until they’re softened (about 20-25 minutes). Set aside to cool. Preheat the oven to 350 degrees Fahrenheit with rack in the middle. Brush a mini muffin pan with melted butter. Lay a stack of four 18-by-13inch sheets of thawed phyllo pastry on a clean surface. Brush each layer with melted butter. Cut into 24 squares and press each square into the muffin pan. In a bowl, beat the egg and mix the onions, honey, lime zest, lime juice and Sambal Oelek together. Fold in the blueberries and goat cheese. Equally distribute the mixture into the phyllo cups. Top with chopped almonds. Baked for 12-15 minutes until golden brown. Remove from the pan and top with fresh basil. Serve immediately.
