Mom’s Apple Dumplings

This has always been my favorite dessert growing up in Newfoundla­nd . My Mom , 94 years old, still makes it for me when I go home for a visit. I was born in Newfoundla­nd and go home twice a year to visit. This recipe of my Mom’s is definitely the best and the only recipe of its kind because it is not written in any cookbook.

1 ½ cup all purpose flour

¼ cup granulated sugar

2 tsps baking powder

½ cup milk

½ cup butter

1 egg

1 tsp vanilla

1 tsp cinnamon

½ cup water

3 ‐4 apples

Peel, core and cut apples. In a saucepan add apples ,water and sugar. Bring to a boil and then simmer. Add cinnamon to apples if you prefer or add to other dry ingredient­s. While apples are cooking mix dry ingredient­s. Cut in the butter. Stir in milk, vanilla and egg. Dough should be just soft enough to be dropped by spoon. Drop batter by spoonfuls over hot apple mixture. Cover tightly and let simmer for 15‐20 min or till cooked. Dumpling will be puffy and double its size Serve hot. Makes 4‐ 6 servings
