Lit­tle Blue­berry Cakes

(makes 12)

4 ½ cups flour

4 tsp bak­ing pow­der

½ tsp salt

2 eggs

1 ½ cups su­gar

½ cup melted but­ter

1½ cups milk

Grated zest of 1 lemon

1 medium-sized ap­ple, diced

1½ cups blue­ber­ries

Pre­heat oven 325F.

Line a muf­fin tin with pa­per lin­ers.

Sift to­gether flour, bak­ing pow­der, and salt. Wisk to­gether eggs, su­gar, melted but­ter. Then add milk and zest to the egg mix, and stir in the ap­ple and blue­ber­ries. Gen­tly fold in the flour mix, and spoon into the pa­per-lined muf­fin tin. Bake for 30 mins, and then serve with tea and a Humphrey Bog­art film classic. Cloth­ing op­tional.
