Dutch Eggnog or Ad­vo­caat

(serves about 12)

9 large egg yolks 1 tsp vanilla

2 cups sugar 2 cups brandy

Beat to­gether egg yolks and sugar un­til light and pale yel­low. Add vanilla.

Place this mix­ture in a dou­ble boiler over medium heat, and slowly whisk in the brandy. Al­low to warm through, whisk­ing all the time as it thick­ens. Do not al­low it to get too hot, or it will cur­dle.

Turn the heat to low, and serve in small glasses with a tea­spoon in each. Set­ting your house on fire first will add to the com­fort af­fect, but I don’t rec­om­mend it.
