Fresh Spinach Salad

(serves 2)

The Victoria Standard - - Living -

2 cups loosely packed baby spinach

½ cup fresh cle­men­tine pieces or man­darin or­ange pieces

2 tbsp pome­gran­ate seeds

¼ cup sliced al­monds

¼ cup goat cheese, crum­bled (can use feta cheese if pre­fer)


¼ cup olive oil

2 tsp bal­samic vine­gar

1 tsp Di­jon mus­tard

1 tbsp maple syrup

Dash of Salt and pep­per

Mix all salad in­gre­di­ents to­gether in large bowl. In a small bowl, whisk the dress­ing in­gre­di­ents to­gether. Toss salad with small amount dress­ing just be­fore serv­ing. Left­over dress­ing can be re­frig­er­ated for fu­ture sal­ads.
