Noodle soup goes veggie … and Persian

There's good news and bad news. The bad news is that this recipe is somewhat healthy for you and even vegetarian. The good news is that it's very delicious and flavourful!

It's a fairly hearty dish on its own and could be served as a lighter complete meal.

“Persian” cuisine is a loosely used term as it incorporat­es elements from Greek and Turkish traditions, as well as Northern Africa and others from the Middle East outside of Iran only.

It's a cuisine that would often incorporat­e rice, fruit, nuts and veggies and, yes, also meat.

It is not necessaril­y spicy or hot, but use of herbs and spices to incorporat­e flavour.

Instead of rice, we suggest the use of orzo in this dish, which although it looks like rice, is actually a pasta (which means it has gluten).

We then use beans and lentils instead of meat and nuts, but still creating a tasty and hearty meal!
