Leisurely break­fast

With the often fran­tic hol­i­days al­most over, it’s time to slow things down a bit and en­joy some of the sim­pler things — like a good break­fast to start the day.

Like so many meals, it doesn’t have to be time con­sum­ing or com­pli­cated.

Check and see what’s in the fridge that will work well with a fried egg.

I like open-faced sand­wiches and for the base you can use bagels, English muffins or crusty bread.

The im­por­tant thing is to toast it.

Your cheese choice can be a creamy goat’s cheese or a sharp piece of ched­dar.

Other in­gre­di­ents can in­clude spinach, as in the first recipe, or you can use leafy let­tuce and fresh toma­toes.

There are so many com­bi­na­tions. Be­low are just two sug­ges­tions to con­sider.

Pour that cof­fee and en­joy a leisurely break­fast.
