For hurried cooks, we offer two quick meals. Hot Bulgur Cereal With Dried Apricots 3 Star Tested Bulgur, a high source of fibre, is easily found in health food stores and some supermarke­ts. From Healthy Home Cooking: More than 200 Easy, Low- Fat Recipes for You to Enjoy by the Canadian Home Economics Associatio­n. Make it at night, then cook quickly in the morning as a hot cereal alternativ­e. You can use raisins, dates or dried apple instead of apricots. 1/ 2 cup bulgur 1/ 4 cup quick oats 2 tbsp wheat germ 6 dried apricots, chopped 1 tbsp brown sugar 1- 1/ 2 cups water PREPARATIO­N: In bowl, combine bulgur, oats, wheat germ, apricots and sugar. Stir in water. ( You can cover and refrigerat­e up to 3 days before cooking.) To microwave single serving, in deep microwavab­le bowl, microwave 1/ 2 cup bulgur mixture at high 1- 1/ 2 to 2 minutes or until thickened and liquid is absorbed. Stir once. To cook 4 servings, in medium saucepan, cook bulgur mixture over medium heat, stirring frequently, 8 minutes or until mixture thickens. Makes 4 servings. Egg Fried Rice 3 Star Tested A Fuchsia Dunlop recipe from Gourmet magazine. 1 tbsp peanut oil 4large eggs, lightly beaten 4 cups cold, unsalted, cooked white rice 1 tsp salt 4green onions, thinly sliced 2 tsp Asian sesame oil PREPARATIO­N: Heat wok over high heat until drop of water vaporizes instantly upon contact. Add peanut oil, swirling to coat wok evenly. When oil beings to smoke, add eggs, tilting wok and swirling eggs to form thin, even layer spread over most of wok. Cook 30 seconds. Add rice and salt. Stir- fry, breaking up eggs and letting rice rest several seconds between stirs, until rice it hot, about 3 minutes. Stir in green onions and sesame oil. Stir- fry 1 minute. Makes 4 side servings.
