This simple, versatile dish would be equally delicious with sausages or ice cream. Use tart red apples. You can substitute a 10-inch, round ovenproof dish for the skillet. 1/ 4 cup butter 2 tbsp + 1/ 4 cup granulated sugar 1 tsp ground cinnamon 3 apples (about 1 lb/ 450 g), peeled, cored, each sliced in 24 thin wedges 4 eggs, separated 1/3 cup all-purpose flour 1/2 tsp baking powder 1/8 tsp salt 1/3 cup whole milk PREPARATIO­N: Melt butter in 10-inch skillet in preheated 400F oven.

In small dish, stir together 2 tablespoon­s sugar and cinnamon. Sprinkle evenly over butter. Top with apple slices. Return to oven and bake 10 minutes. Meanwhile, in medium mixing bowl, beat egg whites with electric mixer until foamy. Beat in remaining 1/ 4 cup sugar 1 tablespoon at a time, until soft peaks form.

In small bowl, stir together flour, baking powder and salt.

In large bowl, blend yolks and milk with electric mixer. Stir in flour mixture just until blended. Fold in egg whites.

Spread batter evenly over top of apples. Return to oven and bake 20 minutes or until golden brown and cooked through. Run knife around edges to loosen. Invert on to serving plate. Serve warm. Makes 4 to 6 servings. Email: ssampson@thestar.ca.
