Re Quebec cranks up maple syrup production amid internal revolt, rising foreign competition, Feb. 20 Now that we know all about the maple syrup business, please remind us why it needs strict, expensive, professional regulation. Improperly handled maple sap will settle as crystals at best, develop toxic moulds at worst.
