Re Quebec cranks up maple syrup production amid internal revolt, rising foreign competitio­n, Feb. 20 Now that we know all about the maple syrup business, please remind us why it needs strict, expensive, profession­al regulation. Improperly handled maple sap will settle as crystals at best, develop toxic moulds at worst.
