Rustic recipes perfect for holidays

- Ricardo

This holiday season, I’m all about menus that make life less complicated and lighten my kitchen workload. Here’s how to do it with four holidayperfect, rustic recipes that don’t sacrifice any cheer or traditional flavours. Spread some joy My chicken liver mousse is quick, inexpensive and impressive, with just a sear in the pan, a buzz in the food processor, a dash of sherry and an hour of chilling. It’s one of the easiest charcuterie items you can make — with the biggest payoff. Serve alongside poached apples and your choice of crackers or bread, and not only will you look like a real pâté pro, but your guests can help themselves. Get stuffed Your veggie needs are covered with these peppy little stuffed peppers that bring a pop of colour and hint of seasonal flavour to the table. The bulgur filling is made with carrot juice for a touch of sweetness, as well as raisins, pine nuts and a four-spice blend (white pepper, cloves, ginger and nutmeg). All you have to do is stuff, sear, bake and enjoy! Bird’s the word I took everything you love about turkey and made a fast, foolproof recipe. Leave this holiday winner simmering in a pot until it’s fall-apart tender. The cooking liquid, boosted with mushrooms, wine and cognac (or brandy) is your gravy, and a generous topping of chestnuts, hazelnuts, shallot, panko and parsley is the stuffing dreams are made of. Mad about you My eggnog-cream-filled madeleines could not be more fuss-free. Once you’ve baked the madeleines, simply hollow out the centre of each little cake and fill with your festively flavoured pastry cream. Your guests won’t believe how you packed so much holiday cheer into such small, delicious bites. The best part? No cutlery or plates required!
