Wildwood Pear Salad
The changing seasons bring in an assortment of new flavours—including pears! While apples and squash may be fall favourites, this salad recipe celebrates the pear, a juicy and flavourful addition to your autumn al meals.
Filled with fibre and antioxidants, pears are excellent for improving gut health and fighting inflammation. The delicious bell-shaped fruits are available year-round, making them a great snack choice for every season. PREP TIME: 20 MINUTES
INGREDIENTS
• 1 large head romaine lettuce rinsed, dried and chopped
• 2 pears cored and diced
• 200 g Wildwood shredded
• 3 tbsp. cranberries
• 3 tbsp. pistachios or walnuts
Dressing
• 2 tbsp maple syrup
• 3 tbsp balsamic vinegar
• 1 tbsp Greek yogurt
• 1 tsp mustard
• ⅓ tsp onion powder
• ⅓ tbs garlic powder
• 1 tsp salt
• ½ tsp Italian herb mix
• ⅔ cup olive oil
• black pepper (to taste)
DIRECTIONS
1 In a large salad bowl, combine romaine lettuce, pears, Wildwood cheese, cranberries and pistachios.
2 Whisk together dressing
ingredients.
3 Pour dressing over salad,
toss and serve.
