Asparagus Cheddar Toast Tarts

6 slices whole wheat sandwich bread

2 eggs

4–5 stalks asparagus, sliced

1–2 oz. old white cheddar salt & pepper oil to grease pan


1. Preheat oven to 350 F 2. Using a glass or cookie cutter, cut circles out of bread slices and roll flat. 3. In a greased muffin tin, press flattened bread into cups.

4. Bake for 3 to 6 minutes until “toasty.”

5. Meanwhile, whisk eggs with salt and pepper.

6. Remove toast cups from oven and divide asparagus and cheddar evenly into cups. 7. Divide egg mixture into each cup, careful not to overflow. 8. Bake for 12 to 15 minutes, until set. Enjoy.
