Dom Melchor is always one of the most distinctiv­e Cabernet Sauvignons from Chile’s famed Alto Maipo area. Ripe, round, full, suave and smooth, the palate is awash in savoury aromas and juicy acidity. There are cassis jam, blackberry, licorice, resin, earthy, peppery, floral, spicy, vanilla, kirsch, bay and mint flavours with a touch of leather and chocolate. The finish is full and warm but it expresses excellent fruit in a long, suave, juicy style. A fine Cabernet Sauvignon made for steak.
