Time to spring clean your diet

Spring cleaning isn’t just about declutteri­ng your home. It’s also the perfect time for Canadians to spring clean their eating habits after a season of heavy, calorie-laden comfort foods. Becel has come up with some timely tips and delicious heart-healthy recipes to help kickstart your diet makeover. These two simply ooze spring goodness.

Buttery Citrus Sautéed Vegetables

1 1⁄2 lbs (680 g) of your favourite vegetables (like red onions, zucchini, asparagus, bell peppers), coarsely chopped 3 tbsp (45 mL) Buttery Taste margarine 1/4 cup (60 mL) loosely packed fresh parsley leaves, chopped (optional) 1 clove garlic, finely chopped 1⁄2 tsp (1 mL) grated lemon peel Melt Buttery Taste margarine in large non-stick skillet over mediumhigh heat and cook vegetables, stirring occasional­ly, until tender-crisp, about 10 minutes. Combine parsley, garlic and lemon peel in small bowl. Evenly sprinkle over vegetables. Cook, until crumbs are heated, about 1 minute.

Grilled Chicken with Roasted Red Pepper and Arugula Sandwich

2 boneless, skinless chicken breasts, 3 1⁄2 oz (100 g) each 4 pieces whole-grain French baguette, about 4 in. (10 cm) each, halved 4 tsp (20 mL) regular or light margarine 1 cup (250 mL) arugula leaves 1 roasted red pepper, cut into 4 strips Season chicken breasts, if desired, with salt and pepper. Grill or broil chicken until thoroughly cooked. Slice diagonally, then set aside. Spread 2 bread halves with regular or light margarine, then top with arugula, chicken and roasted red pepper. Season, if desired, with salt and black pepper. Top with remaining bread.
