Makes: 6 servings. “I was inspired by an incredible dish I first tried in Hamburg, Germany at a tapas bar, and then again in Granada. I first made them when we were staying in Salobrena, a small city in southern Spain in the province of Andalusia. This dish is easy and delicious; the presentati­on looks great and they were a huge hit. It’s sure to impress!” — Skylar Sinow

3.5 oz. (100 g) Manchego cheese

6 slices of Serrano ham or prosciutto

24 dried dates

1 tsp (5 mL) olive oil

1. Slit each date lengthwise halfway and remove the pit. Dice the cheese into pieces the same size as the pit and stuff the dates with the cheese.

2. Slice the ham into four pieces and then wrap the individual dates with the ham so the ham goes around the date 1 1/2 times.

3. In a frying pan cook the dates on medium high heat until lightly browned, about 3 to 4 minutes, turning them gently.

4. Place nicely on a plate with toothpicks to serve.
