BLUEBERRY AND GOAT CHEESE TOAST WITH LEMON THYME BUTTER

- Adapted from Melts: Over 50 Delicious Toasted and Grilled Sandwich Recipes, by Fern Green (Hardie Grant, 2017).

Serves: 2

1 1/2 tsp (7.5 mL) fresh lemon thyme leaves, minced 1 tbsp (15 mL) unsalted butter at room temperatur­e Pinch sea salt 2 thin slices multi-grain bread, toasted 1/2 cup (125 mL) soft goat cheese 1/2 cup (125 mL) fresh blueberrie­s, some cut in half (stemmed and rinsed) 1 tbsp (15 mL) honey

1. Use a fork to whisk together lemon thyme leaves, butter and salt in a small bowl, until well incorporat­ed. Spread mixture on one side of each piece of toast.

2. Once the butter has melted a bit, gently spread goat cheese on each slice.

3. Scatter blueberrie­s on top, then drizzle with honey.
