HOMEMADE KECAP MANIS

Makes: about 1/2 cup (125 mL) 1/4 cup (60 mL) light soy sauce or gluten-free tamari

3 oz (90 g) palm sugar or brown sugar

1. Combine the soy sauce and sugar in a small saucepan, place over medium heat and bring to a simmer. Reduce the heat to low and thicken to the consistenc­y of maple syrup. This should take no longer than 5 minutes. Leave to cool.
