Jerusalem-born author Reem Kassis has followed up The Palestinia­n Table, her 2017 book about her family cooking, with a collection of 130 recipes that show, as she writes, the “evolving and cross-cultural Arab table” of the Middle East. Dishes from 22 countries represent the Arab world, from the Atlantic Ocean to the Arabian Sea, writes the Philadelph­ia-based scholar in her good-looking, well-written book illustrate­d by photograph­er Dan Perez. This book is a winner.
