CHEWY AND CHOCOLATEY PEANUT BUTTER BROWNIES

So, why wait! Whip up a batch of these easy peanut butter brownies today and treat yourself to the taste of spring. 1 cup (227 g) butter, melted

1 cup (200 g) granulated sugar 1 cup (200 g) brown sugar 4 large eggs

1 (15 ml) tbsp vanilla extract 1 cup (120 g) all-purpose flour 1 cup (100 g) unsweetene­d cocoa powder

1 cup (250 g) peanut butter chips

1 cup (170 g) Reese's Peanut Butter Pieces

1. Preheat your oven to 350 F (175 C). Grease a 9 x 13-inch baking pan or line it with parchment paper, leaving some overhang for easy removal.

2. In a large mixing bowl, add the melted butter, granulated sugar and brown sugar. Using a hand mixer, beat mixture on high for about five minutes. Add the eggs, one at a time, and beat until fully incorporat­ed before adding the next. Stir in the vanilla extract.

3. In a separate bowl, sift together the flour and cocoa powder. Gradually add the dry ingredient­s to the wet ingredient­s. Add the peanut butter chips (not the Reese's Pieces). Mix on low until just combined. Do not overmix. 4. Pour the brownie batter into the prepared baking pan, spreading it out evenly with a spatula.

5. Top batter with two-thirds of the Reese's Peanut Butter Pieces, gently pushing some lightly into the batter. Bake the brownies in the preheated oven for 30 to 35 minutes, until a digital thermomete­r inserted into the middle of the brownies registers 195 F, or until the tops of the brownies are set. Do not overbake.

6. Brownies will continue to set as they cool. Remove from the oven and place pan on an oven rack to cool. Immediatel­y sprinkle the balance of the Reese's Pieces over the top of the brownies as garnish. Cool on rack for two to three hours until fully cool.

7. Lift the brownies out of the pan using the parchment paper overhang and transfer to a cutting board. Slice into squares or rectangles. Serve as is, or warm for 15 seconds in microwave and serve with a dollop of vanilla ice cream for an extra decadent dessert.
