Our favourite cakes of the mo­ment are con­tem­po­rary con­fec­tions brim­ming with tex­ture and whis­per-light tones.

Lay­ers of Love

Trisha Medina of Ro­co­coa But­ter used a dif­fer­ent tech­nique for each tier. Piped flo­ral de­tail­ing, crack­led tex­ture and in­tri­cate fon­dant ruf­fles make this cake a show­stop­per. “This cake is a con­trast be­tween clean, monochro­matic el­e­gance, and de­tailed tex­ture and the flow of na­ture,” Medina says.

Mod squad

White sub­way tiles were the in­spi­ra­tion for this mod­ern geo­met­ric cake by Jen La of JENLA Cake. “The tiles were made from sugar and bent down the mid­dle, which adds depth and di­men­sion to the de­sign, as well as cre­at­ing ev­er­chang­ing shadow de­pend­ing on where the light hits it,” La ex­plains. A cas­cade of sugar or­chids adds soft­ness and ro­mance to the cake.

shine on Allyson Bob­bitt of Bob­bette and Belle was in­spired by a favourite Chanel dress for this cake fea­tur­ing a sugar-paste trel­lis and petite, ruf­fled flow­ers. “We wanted to de­sign a light, del­i­cate ap­pear­ance while still hav­ing lots of vis­ual in­ter­est,” says Bob­bitt. “Of course, few cakes are truly com­plete with­out a touch of sparkle, so we used small sil­ver dragées and tiny Swarovski crys­tals as the fin­ish­ing touches.” Kiss of Colour Amanda Foong Cakes in­cor­po­rated just a hint of pale pink for this gor­geous cake that in­cludes a va­ri­ety of tex­tured el­e­ments. Gold adds glam, while the bot­tom tier’s sur­prise geo­met­ric shape and pat­tern pro­vide con­trast be­tween the lay­ers. Sugar flow­ers on each side frame the cake beau­ti­fully and tie the palette to­gether.
