The orig­i­nal town­site’s cob­bled streets are home to myr­iad flavours. At Tuc Craft Kitchen (pic­tured; page 71), the chang­ing menu show­cases re­gional tastes, in­clud­ing elk carpac­cio, Salt Spring Is­land mus­sels with Fraser Val­ley sausage, fish stew of Lois Lake trout and ahi tuna, and hanger steak bour­guignon with grass­raised beef from lo­cal farms. The city’s orig­i­nal gas­tropub, The Ir­ish Heather (page 71) pairs pints (in­clud­ing prop­erly poured Guin­ness) with hearty fare, from a “posh” grilled cheese sand­wich with Que­bec brie and aged ched­dar to fish ’n’ chips of cod with mushy peas. For clas­sic Ital­ian in truly Tus­can sur­round­ings, head to the cozy con­fines of Al Porto (page 70).
