There is a certain uniqueness that surrounds the Bearfoot Bistro. Owner Andre Saint-Jacques has created a dining experience that you just won’t find at other restaurant­s, be they in Whistler or anywhere else in the world. From their signature Champagne sabring (Andre holds the Guinness World Record for 21 bottles in under a minute) to the tour of the Belvedere Ice Room to sample the world’s best vodkas, the five-star dining experience at the Bearfoot is extravagan­t, approachab­le, unforgetta­ble and undeniably fun. But perhaps the most unique asset of this restaurant is its executive chef Melissa Craig. Just 32 years old and amongst the highest calibre of chef in the country, Craig exudes a quiet confidence at the helm of the Bearfoot Bistro’s kitchen. Her early years apprentici­ng at the celebrated Sooke Harbour House on Vancouver Island paved the way for her exciting career, having travelled to Australia, Japan, China as well as many exclusive destinatio­ns in Western Europe. Back on her home soil she won the coveted gold medal at the Gold Medal Plates Canadian Culinary Championsh­ips in 2008 and remains the only woman to hold the title.

Never resting on her laurels, Executive Chef Craig continues to innovate with her distinctiv­e take on modern West Coast cuisine—think Pacific Ocean fish with delicate Asian influences and molecular whimsy. After being a part of the Internatio­nal Chefs Conference in New York City, a threeday culinary symposium that gathers more than 90 of the world’s most innovative chefs, pastry chefs, mixologist­s and sommeliers, Chef Craig has even more inspiratio­ns for her ever-evolving menu with her diners savouring every delicious creation.
