The inspiratio­n for this chilled waker- upper originally came from a number of Hy’s guests, who continued to ask for an alternativ­e to the typical after- dinner coffee. The result is a double- shot espresso eye- opener that will launch your evening into the wee hours of the morning. The espresso provides the rich coffee structure for the silky St. Rémy à la Crème, a chocolate and hazelnut flavoured liqueur. An ounce of Absolut Vanilla is added to give some punch, before the mix is vigorously shaken with ice into a cool froth, and served in a brandy snifter. There are secret pinches- of- this and dashesof- that which cannot be disclosed, and probably explain the cult following around this invigorati­ng coffee. 1 oz. Absolut Vanilla 0.5 oz. St Remy à la Crème Brew a tall double shot of Espresso. Chill a snifter with ice. Combine liquor over ice in a martini shaker. Combine Espresso with the contents of the martini shaker in the shaker itself and shake. Strain and pour into the snifter. Garnish with Espresso beans.
