When it comes to serving wine, freshness is a priority. As wine is exposed to air, the resulting oxidizatio­n alters the taste and all too quickly the wine goes bad. However, restaurant­s equipped with the Enomatic wine preservati­on system have the upper hand on preserving their bottles. Eric Griffith, owner and wine director of Alta Bistro, has been using the Enomatic system for the past four years. Griffith explains how it prevents oxidizatio­n by pumping argon gas into the bottles. “It’s just displacing the air off of the wine; the argon is making a nice invisible blanket, keeping the wine fresh,” says Griffith. Where a wine could typically go off in as little as two days, the Enomatic machine can keep them fresh for 3- 4 weeks.
