Fifty Two 80 Eatery + Bar at the Four Seasons Resort Whistler

There may not be an actual sea breeze blowing across the Upper Village patio at Fifty Two 80, but that hasn’t stopped bartender Cameron Coull bringing a blast of the South Pacific to his summer feature cocktail.

The Tiki Trio is an edible cocktail taster filled with whimsy, tropical flavours and, of course, rum. You begin with a shaved ice frozen Mojito, follow up with a boozy Mai Tai jelly served in a traditiona­l green Tiki shot glass, and chase it all down with a Pina Colada panna cotta set in an edible chocolate cup.

The trio is served on a small tray that contains real sand and an image of waves. “We wanted to do something unique,” Coull explains. “So we had a bit of an arts and crafts day and came up with this.”

It’s all about bringing a sense of drama to the Four Seasons patio, where live music, BBQs and theme nights are regular events through the summer.

“We want to get the guests involved,” Coull explains. “This definitely has wow factor, and we want them to leave with an experience they’ll remember.”
