No one can argue that Araxi’s patio is the place to see and be seen on a beautiful summer day. Situated in the heart of the village, it’s the best spot to people watch in town.

It’s also a very hot ticket – beginning with lunch, right through until dinner.

“We are always packed,” says Restaurant Manager Neil Henderson. “Between three and five on a weekend, we can easily serve a hundred dozen oysters. It’s a vibrant place to be, and it comes with the same fine dining and standard of service we practice inside.”

The cocktail list boasts ten to twelve new creations each season, and Cocktail Director Shane Clarke says he likes to bring a lot of different styles and flavours.

“Not everything has to be super-acidic just because it’s summer,” he says.

The Smokeless Cigar is a case in point: he takes Jameson Irish whiskey, house-smoked vanilla, muddled fresh local gooseberri­es and raspberrie­s, a dash of citrus and tops it all with a vanilla and cigar foam.

“Cigars are one of my favourite flavours,” he notes. “And depending on the type, you can find some strong citrus notes.”

For the foam, he soaks vanilla and cigars in simple syrup for three days, before transferri­ng to a whipped cream charger and adding egg whites.

“The result is a roundness of flavour topped with this creamier texture, and the raspberrie­s really bring a wonderful colour.”
