There are so many textures and fresh bursts of flavour in this dish, it’s hard to believe it contains no dairy or gluten. Hokkaido pumpkin, roasted and puréed, replace the standard potato. Oven-dried tomatoes, onion crisps and steamed organic broccoli add hefty taste and variety. Chef de Cuisine Axel Obeth notes that game hen is even less fatty than salmon, making it a perfect fit for the hotel, with its focus on health and wellness.
