A super spy walks into a bar … And, really, if James Bond did drop by Walkerville’s Walkermole, the bartender would have the perfect martini for him.

Meet Bedard, Brandon Bedard, who has created a Bond martini he calls Licence ‘Te’Kill-Ya’, made with tequila. Why? Because Bond likes to keep up with trends and tequila is very contemporary, said Walkermole’s resident bartender.

“It’s so dry, but it’s not too overpowering. You can still taste the vodka and gin,” he says.

To make it, mix together 1.5 oz of Tanqueray gin, 1/2 oz of Grey Goose vodka, then add Frida Kahlo Blanco tequila, with 100 per cent agave.

“He should have a manly drink,” said Bedard.

His martini tips: shake it up, because it blends the ingredients — which may be why Bond prefers his martinis shaken, not stirred.

Chill the glass first, to make the drink stay cool over a few rounds of Baccarat.

Look for slight frost at the bottom of the shaker as a sign the drink is well mixed and chilled.

Twist lemon or lime over the glass to add juice, then rub the twist around the rim for enhanced flavour, suggested Walkermole’s Chef David Dimoglou.

The original Bond martini calls for Lillet, a dry vermouth Bedard was unable to find. Instead, he suggest 2 oz of Tanqueray, 1 oz of Grey Goose and 1/2 oz of your favourite dry vermouth. Shaken over ice, of course.

This martini coincides with Thursday’s opening of Skyfall, the 23rd movie in the Bond series.

Cheers, Mr. Bond and thanks Brandon Bedard.
