Redescubriendo Chiloé
Islowly raise the spoon to my lips, blowing gently before slurping up the exquisitely flavorful broth. The gallina de campo - freerange chicken - falls off the bone with the slightest prodding from my spoon. The potatoes are soft and steeped in rich juices. Cupping the bowl in my hands, I allow the warmth and smell of vegetables and meat to rise, filling me and this cabin, located on a distant and isolated stretch of river near Lake Huillinco on the main island of Chiloé. I sit in satisfaction and amazement, wondering, “how did I get here?”
In a literal sense, it was a bit complicated. To get here, I had to drive thirty minutes from Castro, Chiloé's capital city, to a deserted stretch of lakeshore, and then take a boat across the
Me llevo lentamente la cuchara a la boca, soplando antes de sorber el exquisito caldo. La gallina de campo está tan tierna que se deshace sola. Las papas están blanditas y muy ricas. Sujeto el cuenco de cerámica con ambas manos, me lo acerco a la cara y aspiro. El sabroso aroma de las verduras y la carne se eleva, llenándome a mí y a esta cabaña, ubicada en un tramo distante y aislado del río cerca del Lago Huillinco, en la Isla Grande de Chiloé. Me siento satisfecha y sorprendida, y me pregunto, “¿cómo he llegado hasta aquí?”.
En un sentido literal, fue un poco complicado. Tuve que conducir treinta minutos desde la capital de Chiloé, Castro, hasta un sector desierto de la orilla del lago, y después navegar a través de éste y remontar varios kilómetros de río hasta arribar a una diminuta finca, donde mis anfitriones de Paraíso Tours - Don Mario, María Graciela y el resto de su familia - han preparado probablemente la mejor cazuela que he comido (sin contar la de mi suegra chilena, por supuesto).
