Items on the menu are largely or­ganic and of­ten lo­cally sourced, with chefs sub­sti­tut­ing nat­u­rally oc­cur­ring su­gars for re­fined foods, while nu­tri­tious nuts and oils take the place of un­healthy fats. Raw foods rich in liv­ing en­zymes, vi­ta­mins, and min­er­als are also served to boost en­ergy, and each dish has been care­fully de­signed to pro­vide op­ti­mal nu­tri­tion with­out sac­ri­fic­ing on taste.
