FROM LIMA WITH LOVE
Thanks to newly minted eatery Ichu Peru ( ichu .com.hk), Hong Kong–based fans of acclaimed chef Virgilio Martínez will no longer need to leave town for a taste of his contemporary Peruvian cuisine. His flagship venue in Lima, Central, ranked among the top five of the World’s 50 Best Restaurants for three of the past four years, and Korean-born chef Sang Jeong has been sent from the Central team to helm Ichu’s kitchen. Menu highlights range from classic ceviche and the abstract-looking palta quemada— which features charred avocado, aji limo peppers, and cassava—to sea bass prepared with ashed leaves in a style typical of Peru’s Amazonian jungle. Another draw? The snazzy bistro-style setting by gifted Hong Kong designer Joyce Wang.
