Thanks to newly minted eatery Ichu Peru ( ichu .com.hk), Hong Kong–based fans of acclaimed chef Virgilio Martínez will no longer need to leave town for a taste of his contempora­ry Peruvian cuisine. His flagship venue in Lima, Central, ranked among the top five of the World’s 50 Best Restaurant­s for three of the past four years, and Korean-born chef Sang Jeong has been sent from the Central team to helm Ichu’s kitchen. Menu highlights range from classic ceviche and the abstract-looking palta quemada— which features charred avocado, aji limo peppers, and cassava—to sea bass prepared with ashed leaves in a style typical of Peru’s Amazonian jungle. Another draw? The snazzy bistro-style setting by gifted Hong Kong designer Joyce Wang.
