Cantina, an Italian restaurant in Central’s Tai Kwun under the Aqua Restaurant Group, introduces a new prix fixe menu that o ers a full choice of a la carte dishes for a fixed price.
Conceived by Italian chef Matteo Caripoli, the new menu is based on nostalgic Italian family recipes, elevated with the culinary expertise of Chef Matteo. It upholds the traditional Italian values of “following the seasons and respecting the freshest ingredients” showcasing good honest Italian cooking with a modern twist. Diners can select a full choice of à la carte dishes from the menu at a fixed price.
Authentic and flavourful appetizers include Vittello tonnato – an explosion of flavours and textures featuring slow-cooked veal with quail eggs finished with a creamy tuna and anchovy sauce. This dish is a traditional north Italian Piedmontese favourite.
The offering also includes paper-thin beef carpaccio served with seasonal mushrooms, rocket and nutty parmesan paired with horseradish dressing.
As for pasta and risotto, the Sicilian red prawn risotto is prepared with Sicilian red prawns, topped with Stracciatella and Bronte pistachio, resulting in a rich and creamy flavour.
The homemade tortellini filled with carbonara is a dish that features incredible Parmesan cheese sauce paired with crispy guanciale., creating a unique and flavourful experience.
Another must-try is the Chicken roulade filled with chicken heart, liver and finely chopped mushrooms, served on sautéed spinach.
The Mediterranean-style cod fillet features cod, capers and Taggiasche olives from Liguria, chickpea purée and fresh cherry tomato sauce, creating a rich and layered flavour profile.

風味正宗的頭盤,包括「意式吞拿魚醬小牛肉」配搭鵪鶉蛋和幼滑的吞拿魚醬,這道菜是意大利北部皮埃蒙特人最愛的美食。此外,還有「意式生牛肉」配時令蘑菇、芝麻菜和巴馬臣芝士片,伴以意大利傳統的辣根醬。
至於意粉和燉飯方面,「西西里紅蝦意式燉飯」配絲翠奇亞芝士和布朗特開心果,味道香濃,口感幼滑。
「卡邦尼巴馬臣芝士意大利雲吞」,選用美味的巴馬臣芝士醬和香脆的風乾豬頰肉入饌,別具風味。此外,還有「黃油雞肉卷」裡面填滿雞心、雞肝、乳清芝士和蘑菇碎,配搭炒菠菜。而「地中海風味鱈魚柳」選用鱈魚加入水瓜榴、塔吉亞斯卡橄欖、鷹嘴豆蓉和新鮮的車厘茄醬,味道層次豐富。
