Cantina, an Italian restaurant in Central’s Tai Kwun under the Aqua Restaurant Group, introduces a new prix fixe menu that o ers a full choice of a la carte dishes for a fixed price.

Conceived by Italian chef Matteo Caripoli, the new menu is based on nostalgic Italian family recipes, elevated with the culinary expertise of Chef Matteo. It upholds the traditiona­l Italian values of “following the seasons and respecting the freshest ingredient­s” showcasing good honest Italian cooking with a modern twist. Diners can select a full choice of à la carte dishes from the menu at a fixed price.

Authentic and flavourful appetizers include Vittello tonnato – an explosion of flavours and textures featuring slow-cooked veal with quail eggs finished with a creamy tuna and anchovy sauce. This dish is a traditiona­l north Italian Piedmontes­e favourite.

The offering also includes paper-thin beef carpaccio served with seasonal mushrooms, rocket and nutty parmesan paired with horseradis­h dressing.

As for pasta and risotto, the Sicilian red prawn risotto is prepared with Sicilian red prawns, topped with Stracciate­lla and Bronte pistachio, resulting in a rich and creamy flavour.

The homemade tortellini filled with carbonara is a dish that features incredible Parmesan cheese sauce paired with crispy guanciale., creating a unique and flavourful experience.

Another must-try is the Chicken roulade filled with chicken heart, liver and finely chopped mushrooms, served on sautéed spinach.

The Mediterran­ean-style cod fillet features cod, capers and Taggiasche olives from Liguria, chickpea purée and fresh cherry tomato sauce, creating a rich and layered flavour profile.

風味正宗的頭盤,包括「意式吞拿魚醬小牛肉」配搭鵪鶉蛋和幼滑的吞­拿魚醬,這道菜是意大利北部皮­埃蒙特人最愛的美食。此外,還有「意式生牛肉」配時令蘑菇、芝麻菜和巴馬臣芝士片,伴以意大利傳統的辣根­醬。

至於意粉和燉飯方面,「西西里紅蝦意式燉飯」配絲翠奇亞芝士和布朗­特開心果,味道香濃,口感幼滑。

「卡邦尼巴馬臣芝士意大­利雲吞」,選用美味的巴馬臣芝士­醬和香脆的風乾豬頰肉­入饌,別具風味。此外,還有「黃油雞肉卷」裡面填滿雞心、雞肝、乳清芝士和蘑菇碎,配搭炒菠菜。而「地中海風味鱈魚柳」選用鱈魚加入水瓜榴、塔吉亞斯卡橄欖、鷹嘴豆蓉和新鮮的車厘­茄醬,味道層次豐富。
